Persian Saffron rice pudding recipe

Rice milk is one of the light and very hearty Iranian dishes that you can serve as a dessert. 


Necessary ingredients for 2 people
half grain rice 1 cup
full fat milk 1 liter
Rose WATER 2 tablespoons
Sugar 1.5 cups
cream 2 tablespoons
push 1 teaspoon
Salt ½ tsp
Brewed saffron 1 tablespoon



first stage

It is better to soak the rice the night before so that it becomes soft. To start, pour the rice together with 2 cups of water and half a teaspoon of salt into a suitable pot and put it on the heat until the rice cooks well until it splits.

second stage

Then we add the milk to the rice and increase the heat so that the milk boils faster. After the milk boils, add sugar along with cardamom powder and mix well until they are uniform, then reduce the heat

third level

After the sugar dissolves, taste the rice milk and add more sugar if desired. Now we wait until the rice milk reaches a sufficient concentration and fits well, then we add the brewed saffron along with cream and rose water to the pot.

The fourth stage

We mix the ingredients and when the rice milk settles, we take it off the heat. At the end, pour the hot rice milk into the dish of your choice and decorate and serve with desired ingredients such as pistachio powder, rosehips, ets
