  • Starch: half a cup
  • Sugar: 3 cups
  • Water: 7 cups
  • Liquid oil: half a pint
  • Brewed saffron: 1 teaspoon
  • Rose water: 5 tablespoons
  • Ground cardamom: As much as needed
  • Pistachio and almond slices: as much as needed

 

How to prepare saffron muscat ( Masghati )

  • First, dissolve the starch in two cups of water well and let it remain for 10 minutes. Then pass it through a strainer.
  • Put the sugar with 5 cups of water and liquid oil on the heat. Stir this mixture enough to dissolve the sugar in the water.
  • When the solution starts to boil, add the dissolved starch.
  • Stir the above mixture constantly over high heat until the solution thickens. Note that continuous stirring has a significant effect on the final consistency of Muscat.
  • When the solution becomes relatively thick, reduce the heat and let the ingredients stay on the heat for about 2 hours. Don't forget to stir.
  • When the consistency of the ingredients becomes porridge-like, add cardamom, rose water and brewed saffron to the ingredients.
  • Let the ingredients remain on the heat. Your muscat is ready when the material becomes elastic and can be easily removed from the container.
  • Turn off the flame. Add pistachio slices and almonds. Stir again until the nuts are evenly distributed.
  • Grease the desired dish and pour the muscat liquid on it. Let it stand for a few minutes at room temperature. Then put it in the refrigerator for 8 hours.
  • After this time, cut the muscat into desired shapes and drink it. You can also use pistachio, almond, coconut, and rosehip powder for decoration.
